Total time:60 minutes
- 2 kg pumpkin
- 1 l milk
- 1 l vegetable broth
- 3 tablespoons rice
- 2 tablespoons sugar
- 2 knobs butter
- 2-3 drops Rosemary essential oil
Cut the pumpkin into 4 pieces and steam for 20 minutes. Remove the seeds and skin, mash with a mixer or potato masher. You may also use a pre-cleaned pumpkin with no peel and seeds, that you will cook with one glass of water for about 20 minutes. If there is still too much water, cook for a few more minutes so that the water is absorbed.
Add milk, rice, 1 liter of vegetable broth and simmer at medium/low heat for 30 minutes, so that the rice is well cooked. Adjust salt and pepper, add butter and two or three drops of Podere Santa Bianca Rosemary essential oil. If you like a sweet flavor, add two tablespoon of sugar. Serve warm as it is, or with toasted bread. Enjoy!
